Whole Wheat Date Nut Bread

½ c. butter ¾ c. brown sugar 1 egg 1 c. stone ground whole wheat flour ½ c. unbleached flour 1 t. Baking soda ¾ t. Salt 1 c. dates, chopped ¾ c. boiling water ¼ c. buttermilk ½ c. chopped nuts |
Cream together butter and brown sugar. Beat in one egg. Sift together flour, baking soda and salt. Add dates to boiling water until soft. Add buttermilk to dates. Add dry ingredients, stirring enough to combine well. Add nuts. Turn into well greased 9 x 5” loaf pan. Bake in 350 F oven for 50 - 60 minutes. Cool in pan 10 minutes. Remove from pan + finish cooling on a rack. |
