3 eggs 1 C. oil 1 ½ - 2 C. sugar 2 C. peeled and grated Zucchini (blender) or cooked pumpkin 1 t. Vanilla 3 C. flour 1 t. Salt 1 t. Soda 3 t. cinnamon ¼ t. Baking powder 1 C. nuts |
Beat eggs until light and foamy. Add oil, sugar, zucchini, and vanilla. Mix in flour, salt, soda, cinnamon, baking powder. Add nuts. Bake one hour at 350 F in 2 greased loaf pans 8x4”. |
