1 c. oatmeal
2 c. boiling water
1 c. dried milk powder
½ c. oat bran or wheat germ
1 to 2 t. Salt
1 c. water
¼ c. oil
2 T honey
¼ oz. dry yeast
6 to 7 c. flour
Combine oatmeal and boiling water.
Let stand for 20 minutes - cool to lukewarm.
Add milk powder, oat bran, salt, water, oil, honey and yeast.
Mix in flour gradually, until about half is added.
Beat for one minute.
Add rest of flour.
Mix by hand.
When dough begins to leave the sides of the bowl, turn out onto floured board (1 T flour to each cup of flour added).
Cover dough with cloth and let it rest for 10 minutes.
Knead for 10 minutes until dough is smooth, elastic.
Cover dough after putting into oiled bowl and let rise until double.
Punch down and rest for 10 minutes.
Form into loaves, 2 or 3, and put into oiled loaf pans.
Put oil on top of the loaves.
Let rise until double.
Bake at 375 F. for 15 minutes.
Reduce heat to 350 F and bake for 20 minutes longer.
Turn out onto rack to cool.
