1 c. raw rolled oats
1 c. corn meal
2 t. Salt
2 T honey
1 T fat
1 cake yeast dissolved in
½ c. warm water
1 c. rye flour
1 c. whole wheat flour
2 c. boiling water
1 ¾ c. white flour
Add oats, cornmeal, salt, honey and fat to boiling water and let stand until lukewarm.
Add yeast, rye flour, wheat flour and white flour.
Beat thoroughly.
Knead, place in bowl, cover and let rise to double bulk.
Knead again, shape into two loaves.
Let rise and bake in moderately hot oven (375 F) for 45 minutes.

The Settlement Cook Book, written by Lizzie Black Kander, was one of Ruth’s favorites. Lizzie was a progressive reformer from Milwaukee, Dad’s home town. There is a Dickey family connection to her, as she matriculated valedictorian from Milwaukee East High School, where Dad, his brothers, and my Milwaukee Dickey cousins also graduated.
