Toasty Oat Crackers

1 C. quick or old fashioned oats, uncooked 1 C. all purpose flour ½ t. Salt ½ C. butter or margarine 2 C. 8-oz shredded sharp cheddar cheese 2-3 T. cold water |
Toast oats in shallow baking pan in preheated moderate oven (350F) 10-12 minutes. Combine flour and salt, cut in butter until mixture resembles coarse crumbs. Stir in cheese and oats. Sprinkle water over mixture, mixing lightly with fork until mixture holds together. Roll out dough ⅛ in. thick between 2 sheets of waxed paper; cut to form 1 ½ in. sq. Bake on ungreased cookie sheet in preheated hot oven (400F) 10-12 minutes or until lightly browned. Remove from cookie sheet; cool on absorbent paper. Store in loosely covered container. Variations: Add 2 t. Chili powder or 2 t. Dry mustard to flour mixture. Sprinkle 2T. Sesame seeds over rolled dough. Press lightly into surface. |
