Russian Easter Bread (Kulich)

2 packages compressed yeast 1 C. scalded milk 1 C. water 8 C. flour 3 eggs beaten 1 C. sugar ½ C. soft shortening 1 C. currants ½ C. chopped nuts 2 T. vanilla |
Soften yeast in milk which has been cooled to lukewarm. Add lukewarm water and half of flour, beating until smooth. Add eggs, sugar, shortening, currant, nuts, vanilla and enough more flour to make a dough of proper consistency to knead. Knead until smooth and satiny. Place in a greased, covered bowl, and let rise until double in buil, about 2 hrs. Punch down and let rise again. When light punch down again and place in tall greased fruit juice cans, filling not more than half full. Let rise until doubled, then bake at 400F for 40-60 min. Remove from pans immediately 40-60 min. Remove from pans immediately - when cool, glaze with confectioners icing and decorate with nuts and candied fruit. Tried 4/21/46. Yum. 4 loaves. |
