French Bread (Sunset Cook Book of Breads)

2 ¼ C. Warm water 1 pkg of dry yeast 2 t. Salt 2 T. sugar 6-6 ½ C. flour |
Dissolve yeast in water. Add in salt and sugar. Beat and stir in flour. Knead until smooth and elastic. Let rise until almost double (indentation remains in dough when poked). Punch down and form into 2 long loaves. Place on greased baking sheet which has been sprinkled with cornmeal. Let rise until double. Brush with water and make diagonal slashed on top with sharp knife. Place in hot oven (400F) with shallow pan of water in oven bottom until crusty and brown, about 45 mintues. |
